Pumpkin Spice Bread

Preheat oven to 350°F. Coat 2 different 9x5-inch loaf pan with non-stick cooking spray and set aside. Place 2 cups sugar, 15 oz of pumpkin purée, 1/2 cup vegetable oil, and 3 eggs in a large bowl and whisk until smooth. Add 1 tbsp pumpkin pie spice, 3 crumbled Nature's Bakery Pumpkin Spice Fig Bars,1 1/2 tsp baking powder, 3/4 tsp baking soda, and 1/2 tsp salt, and whisk to combine. Add 2 1/4 cups flour and fold it in. Pour the batter into 2 prepared pans and spread into an even layer. Sprinkle the tops of each with the 1 crumbled up Pumpkin Spice Fig Bar. Bake for an hour to an hour and 20 minutes or until a toothpick comes out mostly clean. Let cool 10 minutes in each of the pans and then transfer to a cooling rack and enjoy!
