Lemon Cups

When life gives you lemons..make lemon cups! Get ready for your new summer obsession.. In a small saucepan, heat 2 cups of cream and 2/3 cups of sugar until boiling, stir constantly to dissolve sugar. Continue to let boil for 5 minutes (don’t let the cream boil over). Remove pan from heat and stir in 6 Tbsp of lemon juice. Let cool for 15 minutes. Pour mixture evenly into cored out lemons. Refrigerate for at least 2 hours. Top with crumbled with Lemon Fig Bar and fresh blueberries and enjoy!
