Baked Apples
The coziest of fall treats! These baked apples stuffed with our Apple Oatmeal Crumble is like biting into a warm slice of apple pie. Preheat the oven to 375°. Cut out the core and stem of two honey crisp apples, leaving the bottom 1/2-inch of the apple intact. Using a small spoon, scoop out any remaining core to form a cavity in each apple. Crumble up 3-4 Apple Oatmeal Crumbles and mix in 2 tbsp of coconut oil. Stuff each apple with an equal amount of Apple Oatmeal Crumble mixture. Place the apples in an oven-safe dish, crumble-side up. Pour 1 tbsp of lemon juice and 2 tbsp of honey in a small bowl, whisk to combine and pour into the oven-safe dish around the apples. Bake until the apples are tender ~ 30 to 40 minutes. Baste the sides of the apples every 15 minutes with lemon-honey mixture. Serve warm with a scoops of your favorite dairy-free ice cream and enjoy!
