Summer is the best time to bar-b-cue, hang out with friends and family and enjoy delicious food, so I thought I would share a couple of my favorite summer recipes.
Guacamole Salad - Gluten Free, colorful & healthy!
1 can black beans
1 pint grape tomatoes - halved
1 yellow pepper seeded and diced
1/2 cup diced red onion
2 tablespoons minced jalapeño peppers, seeded
1/2 teaspoon freshly grated lime zest
1/4 cup fresh lime juice
1/4 cup good olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon minced garlic
1/4 teaspoon ground cayenne pepper
2 ripe Hass avocados 1/2-inch diced
Toss all vegetables with lime zest in large bowl.
Whisk together lime juice, oil, salt, pepper, garlic, cayenne pepper.
pour over vegetable and stir.
Just before serving, gently fold in avocados.
Throw some chicken on the grill, a bowl of chilled sliced watermelon, and grab a glass of wine!
My second favorite is perfect for an evening cocktail party served with your favorite summer vino.
4 fresh red tomatoes seeded and chopped ( can use 1 28 ounce can diced tomatoes if in hurry:)
3 tablespoons finely crumbled feta cheese ( can substitute reduced fat too!)
3 tablespoons finely chopped pitted kalmata olives
1/4 cup finely chopped red onion
2 tablespoons julienned fresh basil
1/4 cup extra virgin olive oil
1 large garlic clove, pressed
Seasoned salt to taste
Mix together and refrigerate 2 hours
Serve with sliced rosemary, olive oil, or plain sourdough bread lightly toasted in oven.
